A limited-edition nine-year-old single malt form Glenallachie that was distilled in 2012 and initially matured in ex-bourbon barrels, before a secondary maturation in European oak wine barriques from Languedoc and Valpolicella, as well as two Premier Cru Classé chateaux in Bordeaux.
Aromas of orange blossom, Maraschino cherries, espresso, honeysuckle, hazelnuts, lavender, cinnamon and peaches fill the nose, complemented by notes of dark chocolate, redcurrants, sugared almonds, burnt coffee beans, orange zest, ginger, liquorice and blackberries throughout the palate and lingering in the finish.
Famed for sourcing casks from niche producers, Billy acquired this particular Sauternes Barrique (2009 #3712) from a winery in South-West France.
This French oak cask previously held Sauternes, a dessert wine which originates from Bordeaux. As well as bestowing a golden glow to the spirit, this cask has imparted elegant flavours of stone fruit and sweet spices upon the classic honeyed GlenAllachie spirit.
The GlenAllachie 12 Year Old is bottled at 46%, non chill filtered and natural colour and was first unveiled in mid-2018 following Billy Walker taking the reins of the distillery in 2017.
This expression features whisky matured in Pedro Ximénez, Oloroso and virgin oak casks, resulting in a huge flavour profile of fruit, oak and vanilla.
